pineapple bbq chicken potatoes

Hello friends!

I hope that your week is going well! Mine is going very well, although it may be a tad slow. It’s wedding season, so I’ve been going back and forth every weekend it seems, and this coming weekend is the last big one for awhile. I’m super excited for it!! So much that Monday felt like Wednesday already.. Great. Anyways, ain’t nothin a little food can’t fix!

I’ve come to realize that I absolutely love cooking with barbecue sauce. If I could, I would make everything with it! But it’s also nice to mix it up a little, so this week I made a very simple recipe that’s both sweet and savory! 

What you’ll need:

  • Baking potatoes (use however many you’ll need; we made 4!) 
  • 1 lb of chicken (I bought preseasoned chicken with adobo seasoning-worth it!)
  • Optional: adobo seasoning as needed 
  • 1/2 cup of barbecue sauce of choice 
  •  1 can of pineapple juice 

What you’ll do:

  • If you’re making the potatoes with the chicken, you can cook them how you may normally cook them. I usually put them in the oven for about an hour at 375 degrees.
  • In that time, cut up your chicken and add to an oiled pan.
  • If it is not already seasoned, go ahead and season it.
  • Turn the heat to medium high and remember to stir chicken so it can cook evenly.
  • When it is nearly done, add the can of pineapple juice and barbecue sauce, stirring until it is mixed well.
  • Once the chicken is done, turn on low heat to let simmer in the sauce.
  • After that, turn it off and you’re ready to make your taters!


All together, this recipe cost around $15 with extras. For a group meal it’s not a bad price, and even better if you’re meal prepping! I added Monterey Jack cheese and avocados on mine- YUM.

spicy lime thai chicken

Hello there again!

I know it’s been a hot minute since I last uploaded a recipe, and I truly am sorry! Last week was a busy one, and there was a lot going on. But all is well now, and I can’t wait to get back on track with making yummy food!

Tonight was my turn to make dinner, and I’ll be honest I had a hard time finding something that was new and different from what I usually like to make. After some late night searching and brainstorming, I finally found something definitely worth making!

Spicy lime Thai chicken stir-fry:

What you’ll need:

  • 1 lb chicken breast, cut up
  • 1 tsp red pepper flakes
  • 1 tsp garlic powder
  • 1/2 cup chili garlic sauce
  • 1 tbsp soy sauce
  • 1 tbsp sriracha
  • 1 tbsp sesame oil (you can use another oil or no oil at all; I like sesame oil but it’s so expensive!)
  • 1 lime, juiced
  • Salt and pepper to taste

What you’ll do:

  • First, after cutting up your chicken, add oil to a pan and dust on dry seasonings (pepper flakes, garlic powder, salt and pepper) while sauteing your chicken.
  • When the chicken is getting close to being done, add the chili garlic sauce, sriracha, soy sauce, oil, and lime juice into a bowl and mix well.
  • Now, I added some veggies to saute as well. If you are going to add some, add them right before your chicken is done.
  • After everything is done cooking, add your sauce mixture and stir it well.
  • Once it is mixed well, turn off the heat and enjoy!

This recipe was ridiculously easy! I added some rice to go with it as well, and it was very filling. After all is said and done, this recipe will cost around $20. It was less for me because I already had a lot of the ingredients. However, it is great for meal prepping and family night!

bacon wrapped cajun shrimp 

Hello friends!

Happy Father’s Day to all the dads out there as well! I don’t know about y’all, but our day here was pretty nice. We stayed out in the pool all afternoon while watching golf (it sounds worse than it actually was.. I didn’t fall asleep this time if that tells you anything!). Anyways, it was a nice break from the crazy work schedule I’ve got going on. My first week at my new job was last week, and it was a lot of fun! This next week is going to be crazy though, so I’m hoping I can make it through!!!

So since it’s Father’s Day, we did something special for dinner. Now, my dad loves to grill so he was totally fine with grilling some steaks and bacon cajun shrimp. We were fine with it too, surf and turf is ALWAYS a great option! The shrimp that we made this time though was seriously so good and can be put to use in a myriad of different ways. It’s incredibly simple too, I mean it’s basically 3 ingredients at max! 

What you’ll need:

  • 1 lb shrimp (I would get the fresh shrimp from the meat counter.. preferably already de-veined.. I never want to devein shrimp again!!!) 
  • Cajun seasoning
  • Bacon!!!

What you’ll do:

  • First, rinse your shrimp to get any leftover gunk off.
  • Then, in a large bowl, season your shrimp with as much Cajun seasoning as you’d like! We like spicy food, so we added quite a bit!
  • After that, stir the shrimp around to make sure every inch is covered.
  • Cut your bacon strips in half and wrap them all the way around the shrimp.
  • We grilled the shrimp, so we put them on skewers to cook. However, if you are baking them, place them in a pan lined with aluminum foil. 
  • If you’re grilling, keep it on the grill no longer than 15 minutes, flipping it halfway through. The bacon may take longer, but just eye it.
  • After that, take them off the grill and enjoy!!


Oh my goodness y’all, this was SO GOOD. I’m still thinking about them!! This recipe will be a little pricier, but if you’re making it for dad or hosting a get-together, it’s definitely worth it!! I will be making it more often, that’s for sure! If you’re going to bake them instead, I would look online to see how long it will take, because I have absolutely no idea! I would say somewhere around 30 minutes or so.
